A Christmas Cookie Favorite: Rolo Cookies

Okay, I promised you that I would get you this recipe for roll cookies so here it is.  These are my very favorite cookies ever!  I really hope you enjoy this oooey gooey deliciousness as much as I do.  I have had this recipe for years and have no idea where it came from or I would credit the original source.

Rolo Cookies

Ingredients

  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup margarine
  • 2 eggs
  • 2 teaspoons vanilla
  • 2 1/2 cups flour
  • 3/4 cup unsweetened cocoa
  • 1 teaspoon baking soda

Instructions

  1. Preheat oven to 375 degrees
  2. In large bowl, mix together well: sugar, brown sugar, margarine, eggs and vanilla
  3. Add flour, cocoa and baking soda, mix well.
  4. Chill dough in refrigerator for 30 minutes
  5. Roll into 1 inch balls around 1 rolo
  6. Roll dough ball in sugar
  7. Place on ungreased cookie sheet
  8. Bake for 7-10 minutes {every time I have made these, it has been closer to 10}
  9. Let cool for one minute, then place on cooling rack

Notes

I have found that in order to make this dough actually stretch to make 48 cookies, you can only use enough dough to cover the rolo. Enjoy!
