Okay, I promised you that I would get you this recipe for roll cookies so here it is. These are my very favorite cookies ever! I really hope you enjoy this oooey gooey deliciousness as much as I do. I have had this recipe for years and have no idea where it came from or I would credit the original source.
Rolo Cookies

Cook Time: 10 minutes
Total Time: 45 minutes
Number of servings: 48
Ingredients
- 1 cup sugar
- 1 cup brown sugar
- 1 cup margarine
- 2 eggs
- 2 teaspoons vanilla
- 2 1/2 cups flour
- 3/4 cup unsweetened cocoa
- 1 teaspoon baking soda
Instructions
- Preheat oven to 375 degrees
- In large bowl, mix together well: sugar, brown sugar, margarine, eggs and vanilla
- Add flour, cocoa and baking soda, mix well.
- Chill dough in refrigerator for 30 minutes
- Roll into 1 inch balls around 1 rolo
- Roll dough ball in sugar
- Place on ungreased cookie sheet
- Bake for 7-10 minutes {every time I have made these, it has been closer to 10}
- Let cool for one minute, then place on cooling rack
Notes
I have found that in order to make this dough actually stretch to make 48 cookies, you can only use enough dough to cover the rolo. Enjoy!
I’m always looking for new cookie recipes for the holidays and these sound scrumptious. How do these cookies hold up if you prebake them? Seems like you would want them warm for maximum gooeyness.
They are definitely better hot, but even after they have cooled they are still delicious. Me, personally, I toss the cookies in the microwave before I eat them for a few seconds.
