These last few weeks have been a whirlwind. Between trying to finish remodeling my bathroom and planning two birthday parties, homeschool and everything else that comes up, I’m exhausted. Every part of our day has felt rushed; from meal time to clean up, I feel like I’m always rushing lately. I love that there are some easy meals that I keep in my back pocket along with my secret weapons for clean-up. Let’s get to the important stuff – the cheesy potato and ham casserole recipe.

INGREDIENTS

2-lb bag of diced frozen potatoes
1 lb bag of shredded cheddar cheese
1/4 cup diced onion {I sort of kind of didn’t add these today…..a certain two-year-old hid them after I chopped them}
1-2 cans of cream of chicken soup {I generally use about 1 1/2 cans}
1 stick melted butter
salt
pepper
corn flakes
1 lb diced ham {approximate, go as crazy with the ham as you want}

INSTRUCTIONS

Pre-heat oven to 325. Add all ingredients except corn flakes to a large bowl. Mix well. Spread evenly in 9 x 13 baking pan. Bake at 325 degrees for approximately 1 1/2 hours. Check about halfway through and stir. Top with corn flakes. Devour your dinner. Easy peasy.
