I love summer.  I am talking really love it.  While I would love to sit outside until the sun goes down, that just isn’t practical every day.  They have to get to bed on time at least most of the time which means I can’t just put off dinner until we go inside.  That means getting creative with dinner ideas.  I’m a little intimidated by grilling myself – my uncle tried to teach me once and instead told me that I was right – I should just have somebody do it for me, haha.  I don’t care though, I am doing this!Grilled Garlic & Red Pepper Potatoes Pin

Since I hadn’t been shopping in weeks, I decided it was time for us to stock up on lots of goodies.  Maggie is a bit picky, but she LOVES pork usually.  I saw a selection of Smithfield Marinated Fresh Pork that sounded pretty tasty so I picked up a Smithfield Garlic & Herb Loin Filet.  I mean, seriously – you had me at garlic. I was looking for the perfect grilling food and I think I found it.   I always want a little something to go along with my meat though and I had the perfect grilling potato recipe in mind.  Grilled red pepper and garlic potatoes.  I left the store feeling I had nailed this not going inside to make dinner thing!IN StoreSmithfield Marinated Garlic & Herb Pork Loin Filet

So, the other day while the kids were playing outside, I didn’t have to cut out play time short.  We could sit outside with our friends, playing and having fun and smell the amazing scent of dinner cooking.  Watching me get the charcoal grill started was probably entertaining { okay, maybe not getting it started, but keeping it from dying out} but once I got it, there was no stopping me.  I sat outside while the coals got white hot and played tennis and softball with the kids.  When it was time, I threw the Smithfield Garlic & Herb on the grill, put the cover back onl and went back to playing for awhile.

Potatoes on tinfoilSliced potatoes About a 45 minutes later I sliced up the potatoes by slicing each potato multiple times but not quite cutting all of the way through and placing them on some tinfoil.  Then I sliced up a stick of butter and placed it throughout the potatoes. Olive oil, garlic and Italian seasoning I mixed together some olive oil, garlic salt and Italian seasoning and brushed it onto the potatoes, making sure to get it into every slice of the potatoes. Sliced potatoes w herbs Then I chopped up a red pepper – some I diced, some I cut into strips – placing them throughout the potatoes. Peppers and potatoes Then I wrapped it all up tight and added it to the grill for another 45 minutes.   I went back to playing with the kids and enjoying the gorgeous weather we have been having.Food on grill

And – the verdict is in – it tastes every bit as delicious as it smells.  I can’t wait to check out some of the other Smithfield Marinated Fresh Pork to cook again.  It is perfect for grilling.  No mess, no fuss and I don’t have to sacrifice taste.  I am a believer and hope to pick up the Smithfield Peppercorn Garlic Sirloin next time.Smithfield Marinated Fresh Pork w potatoes and strawberries

Grilled Red Pepper and Garlic Potatoes

Ingredients

  • 12 Red Potatoes
  • 1 Stick Butter
  • 5 TBSP Olive Oil
  • Garlic Salt
  • Italian Seasoning
  • 2 Medium Sized Red Peppers

Instructions

  1. Slice potatoes 3-4 times most but not all the way through and place on tinfoil
  2. Slice stick of butter and place throughout potatoes
  3. Mix olive oil, garlic salt and Italian seasoning in small bowl. Brush onto potatoes, getting into each slice
  4. Slice red peppers into strips and place throughout
  5. Cover in tinfoil
  6. Grill for approximately 45 minutes
