Seriously, I have been wanting to try some Stuffed Bell Peppers for quite awhile now, however, I am not a big fan of trying new foods. I am super picky but decided I wanted to give this a try.
I was super excited to be able to tell you that either A) It is super awesome, or B} It isn’t. Instead, I will tell you that it’s pretty darn good, even when you screw up the recipe in almost every possible way. I do believe I’m losing my mind because I can’t figure out how I screwed it up so badly.
I love my crock pot. It’s the best thing for me most days, but I don’t have a lot of recipes for it so we don’t use it too often. You see, the kids wake up from nap time, we go potty, have a snack, and get dressed to go outside. The problem is that as they wake up, they are very engrossed in their toys and not ready to go outside yet. So, it takes awhile to shoe them outside, and by the time we make it outside, we don’t get to play long before we have to come in and make dinner. Using a slow cooker allows us to stay outside much longer, a benefit for all of us! So anyways, we got to check out the eMeals slow cooker meal plan sample and decided to give these Wild Rice and Beef Stuffed Bell Peppers from the clean eating menu a shot. It is very easy to make, yet somehow, I really messed it up. First, I cooked the hamburger all the way through before putting it in the crock pot, then, I burned the rice, It doesn’t end there though. I forgot to add the broth when I put them in the crock pot. Then, I even screwed up the salad and misread shaved for shredded so the salad really wasn’t so good. Leave it to me! Now, with all of these mistakes, we still gave it a shot, and you know what? It was pretty good. The only thing was that it was really dry {hello, I did forget the broth so it had no juice to cook in because the meat had already been cooked as well}. So, we are definitely trying this again, and just maybe I can actually make it the right way!

HA HA HA I loved it. Brought back memories of my younger days……who am I kidding….I still gooof……anyways…if you ever do them in the oven, put your peppers in a muffin pan. Saw it on pinterest 🙂

Stuffed peppers taste so yummy but they’re messy for me so I just throw all the ingredients into a casserole dish and still so good!
I have to share the recipe for philly cheese steak stuffed peppers. They are very unmessy and so amazing! By far my favorite stuffed pepper recipe yet!
