I don’t eat chicken {because I’m weird, I know} but I love pork! Here is one of my favorite pork recipes from eMeals.
Stuffed Porkchops

Ingredients
- 4 thick cut pork chops
- 1 1/2 tbsp melted butter
- 1/2 tsp salt
- 1/2 tsp brown sugar
- 1/8 tsp pepper
- 1/8 ground sage
- 1 apple, peeled and diced
- 1/4 cup cranberries
Stuffing
Instructions
- Add first six ingredients {not including pork chops} in a bowl, mix together. Then add apple and dried cranberries. Mix together.
- Cut pocket like slits in the pork chops. Fill with 1/4 cup stuffing and secure with toothpicks.
- Melt 1 tbsp butter in pan and brown both sides of pork.
- Add water, cover and reduce to simmer for 45-50 minutes.
Notes
I add walnuts and bacon to the stuffing. I also only make 2 pork chops and really stuff them full! This is an emeals recipe and one of my favorites!
We serve this with sweet potatoes and spinach salad {recipe to come next week}.

This sounds delicious and I cannot wait to try it on my Family. Never heard of stuffing chops with fruit. I love it!

This sounds delicious! I’ve actually never thought about stuffing pork chops before.
I might try this tonight, though I don’t have fresh cranberries I do have craisins. I think they would work if I rehydrate them.
I usually use dried cranberries, so I’m sure that would work just fine.
